Buff Vada

Crispy and spicy Buff Vada recipe – a popular Indian street food snack. Perfect for tea-time, parties, and Navratri celebrations.

Ingredients
  

For Stuffing:
  • handful Coriander
  • 5 small pieces Ginger
  • 5 qty Green chilies
  • 1/3 cup Boiled and mashed potatoes
  • 2 tbsp Roasted peanut powder
  • 2 tbsp Dry coconut powder
  • 2 tsp Sesame seeds
  • 1 tsp Cumin powder
  • 1 tbsp Sugar
  • 1 tbsp Chopped cashew –
  • 1 tbsp Raisins
  • 1 tbsp Pomegranate seeds
  • 1 tsp Rock salt
For Outer Layer
  • 2 cups Boiled and mashed potatoes
  • 1/3 cup Arrowroot powder
  • 1 tsp Rock salt
  • 1 tsp Oil
  • Oil for frying

Method
 

For Stuffing
  1. In a grinding jar add coriander, ginger and green chilies and grind coarsely.
  2. In a bowl, add boiled and mashed potato, coriander- green chilies chutney, peanut powder, coconut powder, sesame seeds, cumin powder, sugar, chopped cashews, raisins, pomegranate seeds and rock salt. Mix everything together.
  3. Stuffing is ready, make small balls of stuffings.
For Outer Layer
  1. Mix boiled potatoes, Arrowroot powder and rock salt, Knead and make soft and non-sticky dough.
  2. Make small ball and flatten it, add stiffing and close it carefully. Coat the ball with arrowroot powder.
  3. Fry the vada in medium hot oil until golden and crispy.

Notes

If the outer layer is too much sticky, add some more arrowroot powder.
If you don’t have Arrowroot powder, replace it with any fasting flour.
