Rajgira Halwa – Fasting Sweet Recipe

Rajgira Halwa is a traditional Indian sweet dish enjoyed during fasting days like Ekadashi, Navratri, Maha Shivratri, and Janmashtami. It is one of the most popular falahari sweets (fasting food made with fruits and grains) because it is easy to prepare and absolutely delicious. With its rich flavor and melt-in-the-mouth texture, Rajgira Halwa is a festive favorite for both kids and adults.
What is Rajgira Halwa?
Rajgira Halwa is made using Rajgira flour, which comes from the seeds of the Amaranth plant. Interestingly, these “seeds” are actually botanically classified as fruits. Rajgira is widely consumed during Hindu fasting rituals as it is considered pure, nutritious, and filling.
The process of making Rajgira Halwa is very similar to Aata Halwa (wheat flour halwa). Once you know how to make one, you can easily prepare the other. The dish requires only a handful of ingredients—Rajgira flour, ghee, sugar, water or milk, dry fruits, and cardamom. Rich in ghee and flavored with cardamom, this halwa is a comforting treat during fasting days.

Rajgira Halwa
Ingredients
Method
- Heat up a pan, add 3/4 cup of ghee, when the ghee is slightly hot, add a cup of rajgira flour, mix it well with ghee. Fry on medium heat, constantly stirring with a spatula until it turns golden brown in color. Do not let it burnt.
- When the flour is looking nice golden and release aroma that time add 1 ½ cup of hot milk, and stir continuously and carefully, until milk get fully absorb by the flour, keep the flame law.
- When the milk is absorb well, add 1/2 cup of sugar (sugar you can use according to your taste), mix it well, stirring constantly till it gets thick and all the moisture is evaporated. Ghee come out from the sides. Halwa will leave the sides of the pan.
- Add chopped nuts and cardamom powder, Mix everything well.
- Cover the lid and cook for another 2-3 minutes on medium flame. After 2-3 minutes remove the lid, Rajgira halwa is ready. Serve hot.
Notes
- Use coarsely grinded Rajgira flour, it will give nice texture, Or you can make Rajgira flour at home by grinding rajgira seeds.
- Always use hot milk.
- Don’t use oil instead of ghee, it will not give that much good taste.
- Roast the flour nicely until you can see it changed its color to golden and released nice nutty aroma.

Step 5: Cover the lid and cook for another 2-3 minutes on medium flame. After 2-3 minutes remove the lid, Rajgira halwa is ready. Serve hot.
