Kaju Pista Roll
Ingredients
Method
- In a grinding jar, add pistachio and almonds and grind it coarsely. No need to make fine powder as the crunchy chunks gives more flavor in Kaju pista roll.
- Add sugar and green food color, food color is totally optional but it will give nice color. Now mix everything well. Add milk and make soft dough. Add some ghee and make it soft and non sticky. Cover and keep it aside.
- In a grinding jar, add cashew and grind it in fine powder, Do not over grind, otherwise, the powder would start turning into a paste.
- Sieve the powder, If there are any big chunks, grind them and sieve again. In this way we get fine powder which helps to make crack free soft dough.
- To make sugar syrup, add sugar in a pan. add same amount of water. Mix it and keep it boiling until sugar is dissolved and the syrup is of one string consistency . To check the consistency, touch the syrup with finger and then touch the finger to thumb, gently pull apart. If the syrup forms a single thread without any break, then one string consistency syrup is ready. Turn off the flame immediately, do not over cook the syrup.
- Now, add the cashew powder into syrup and mix it well. Turn on the flame, stir it continuously. Cook on low flame for 3- 4 minute or until the mixture thickens and forms in a dough. Let it cool.
- When the mixture is slightly warm, knead it using plastic paper and make smooth and crack free dough.
- Take pistachio dough, roll it and divide into 2 portions. Roll each portion into a long and thin log.
- Take cashew dough, divide it into two portions. Take one portion and roll it in a rolling pad, use butter paper and ghee so that dough will not stick. Make a thin sheet of cashew dough.
- Now, place pistachio log on the cashew sheet, Wrap the cashew sheet on pistachios log, close it tightly. Cut cashew sheet from the middle, put another pistachio log on the cashew sheet and repeat the process for the rest.
- Roll them more to smoothen, lengthen and for perfect texture. Now cut the rolls into 1.5-inch long pieces. If you wish, apply silver leaf on kaju pista roll to make them more beautiful. Enjoy with your family and friends.
Notes
- Try to make very fine powder of cashew so that the cashew dough will be more soft and crack free.
- You can add cardamom powder or rose water in cashew dough for more flavors.
- If the pistachio dough is not tight add more almond and pistachio powder.
