Barbeque Nation–Style Cajun Spiced Potatoes are a trending snack among the new generation in India. This recipe is a copycat version of the popular restaurant-style potato wedges. In Western cuisine, Cajun spiced potatoes are typically roasted wedges coated with a hot and flavorful spice mix.

If you are not familiar with Cajun spice, it comes from Cajun cuisine, which originated with French-speaking Acadian people deported from Canada and settled in Louisiana. Cajun spice is a fiery blend of paprika, garlic powder, onion powder, black pepper, and herbs. It adds a bold, zesty flavor to any dish.

In this recipe, the spice is not just sprinkled on roasted potatoes. Instead, it is mixed with mayonnaise to create a creamy coating that enhances both taste and texture. The potatoes are first boiled until soft and then coated in flour for deep frying. This technique makes the outside crispy while keeping the inside tender and fluffy.

I intentionally make the mayo-spice mixture slightly thick rather than runny. This helps the creaminess stay on the potatoes without dripping off. The final dish is rich, spicy, and indulgent, making it the perfect snack for anyone craving fried and flavorful food.

Cajun Spiced Potatoes

Cajun spice is mainly a hot blend of paprika, garlic powder, pepper, herbs, onion powder etc. In this recipe spice is not simply added on roasted potatoes as seasoning, but it is mixed with mayonnaise for creamy taste and texture.

Ingredients
  

For crispy potatoes:
  • 20 qty Baby potatoes
  • 2 cups Water
  • 1/4 cup Corn flour
  • 2 tbsp All-purpose flour
  • 1/2 tsp Salt
  • Oil for frying
For spiced mayo sauce (Cajun sauce):
  • 3/4 cup Mayonnaise
  • 1 tsp Chili flakes
  • 1 tsp Mix herbs
  • 1 tsp Onion powder
  • 1 tsp Garlic powder
  • 1/2 tsp Black pepper powder
  • 2 tsp Kashmiri chili powder
  • 3 tbsp Milk
For garnishing:
  • Chopped onions
  • Chopped coriander
  • Paprika/Chili powder

Method
 

  1. For Crispy Potatoes:
  2. Take 15–20 small potatoes and wash them thoroughly. Ensure there is no dirt, as the skin will be left on.
  3. Place the potatoes in a pressure cooker. Cook for only one whistle on high flame. This keeps the potatoes soft but firm.
  4. Transfer the cooked potatoes to a plate and let them cool completely.
  5. Place a potato on a chopping board and gently press with your palm to slightly flatten it. Avoid pressing too hard.
  6. Repeat this process for all potatoes.
Coating and Frying:
  1. In a bowl, mix corn flour, all-purpose flour, and salt.
  2. Add water gradually to make a runny batter.
  3. Dip each potato in the batter and coat evenly.
  4. Heat oil in a pan on medium flame. Fry the potatoes until golden and crispy.
  5. Remove the potatoes and place them on kitchen paper to drain excess oil.
For Cajun Mayo Sauce:
  1. In a bowl, combine mayonnaise, chili flakes, mixed herbs, onion powder, garlic powder, black pepper, and Kashmiri chili powder.
  2. Mix thoroughly. Add milk gradually to achieve a creamy consistency.
  3. Assembling Cajun Spiced Potatoes:
  4. Place the crispy potatoes on a serving plate.
  5. Pour the prepared Cajun sauce over the potatoes.
  6. Garnish with onion, coriander, and a sprinkle of red chili powder.
  7. Serve immediately and enjoy with friends and family.

Notes

  • Do not overcook potatoes.
  • You can use regular potatoes, just chop them into big pieces. 
  • In Cajun sauce, adjust the spices according to your taste.
  • Flour batter should not be very thick or thin.

CAJUN SPICED POTATOES WITH DETAILED INSTRUCTIONS AND STEP BY STEP PHOTOS

Step 1: Take around 15 to 20 small potatoes, wash them good, put them in a pressure cooker and cook for only one whistle on high flame so that potatoes will not break. Make sure potatoes are not so mushy but soft. Transfer potatoes in a plate, let them cool.

Step 2: Take a potato on chopping board, press gently with palm and slightly flatten, do not apply more pressure. Repeat the process for all potatoes.

Step 3: In a bowl add corn flour, all purpose flour and salt. Mix them well. Add water as required to make runny batter.

Step 4: Dip potatoes in a batter, coat them well, and fry on medium heat oil on medium flame until golden and crisp. Remove them on kitchen paper.

Step 5: Take a bowl, add Mayonnaise, Chili flakes, Mix herbs, Onion powder, Garlic powder, Black pepper powder, Kashmiri chili powder. Mix everything well. Add milk little by little and make creamy sauce.

Step 6: On the serving plate, place the crispy potatoes pour prepared Cajun sauce over it. Add onion, coriander and red chilli powder. Cajun spied potatoes are ready. Serve hot.
